Abstract

Fermentlar oziq-ovqat sanoatida muhim biokatalizatorlar bo‘lib, mahsulotlarning sifati, hazm bo‘lish darajasi va saqlash muddatini oshirishda katta rol o‘ynaydi. Ular oqsillar, yog‘lar va uglevodlarning parchalanishini ta’minlab, oziq-ovqat mahsulotlarining ta’mi, tuzilishi va ozuqaviy qiymatini yaxshilaydi.
