Sut kislotasi eng foydali gidroksikarboksilik kislotalardan biridir. Ko'pgina arzon materiallar, masalan, kraxmalli va tsellyulozali materiallar, qishloq xo'jaligi chiqindilaridan, foydalangan holda bakteriyalar va zamburug'lar sut kislotasini ishlab chiqarishda faol ishtirok etadilar. Ushbu maqolada turli xil xom-ashyo, mikroorganizmlar, sut kislotasini ishlab chiqarishda ishtirok etadigan fermentatsiya jarayonlari, shuningdek, sut kislotasining turli sohalarda qo'llanilishi muhokama qilinadi.
