Today, as a result of the growth of the world's population and the problem of food security, the search for alternative protein sources has become one of the pressing issues. Environmental problems associated with animal-derived proteins, their high cost, and shortages in certain regions are driving the development of fungi-based protein production technologies. Fungi are characterized by their rapid growth, high protein content and the ability to process various organic waste. The biotechnology of obtaining nutrient proteins from fungi is one of the modern directions of microbiology and biotechnology and is important on an industrial scale.
